How to Make Greek Lentil Soup
I have very fond memories of my grandmother. Memories of learning to make her infamous Greek recipes. She was originally from Greece and was very proud of where she came from and never let us forget it.
I remember once way back when I was a freshman in high school, I had a special project and presentation about my ancestors. I have grandparents from both Italy and Greece and they all believed that food is a part of life. A way to celebrate love and life.
A part of this project was to create a food to celebrate our heritage.
And after spending some time on the phone with my grandmother, I decided to make this Greek Lentil Soup to make her proud.
It’s fairly quick and easy. Perfect for high schooler at the time. And it’s been a family favorite for years.
This morning while working on chores, it was cold and windy. The Fall temps have been coming and going for a little while, but I think that they are here to stay.
Although, we live in Nebraska, so who knows. It could snow soon or we can have summer like weather and even thunderstorms.
One of my favorite things about fall are all of the soups, stews, foods associated with cooler weather. I think they call them comfort foods. Wink. So today for lunch I made one of my favorite lentil soup recipes.
Its quick, its easy, its healthy and its hearty. Oh, and its delicious too!
Greek Lentil Soup Ingredients
- 1 cup of green or brown lentils (washed and picked clean)
- 4 cups of filtered water
- 1 medium onion, sliced thinly
- 3-6 cloves of garlic (I go heavy here because I LOVE garlic) peeled, sliced
- 3 tablespoons tomato paste
- 1/2 cup of olive oil
- 2 small/medium bay leaves
- 1 teaspoon oregano
- Salt & pepper to taste
Greek Lentil Soup Steps
Add all ingredients to large pan, stir well, cover and simmer on medium/low for about 40 minutes until soft, but not disintegrated.
That’s all there is to it. It’s so simple and delicious.
Add salt & pepper to taste. Serve & enjoy!
