Ingredients you’ll need

Here is what you’ll need:
- Mayonaise
- Greek yogurt
- Chipotle sauce – canned (can be found in the Mexican cuisine aisle of the local grocery store)
- 1 lime, freshly squeezed
- Garlic salt
- Pepper jack cheese – freshly shredded for best results.
- Shredded chicken – perfect for using up leftovers or use rotisserie chicken if desired
- 4 large flour tortillas
You’ll also want some fresh cilantro & lime on the side to garnish your quesadillas.
Substitutions
- This recipe makes 2 large quesadillas, but you can use smaller tortillas for more servings.
- If you don’t have Greek yogurt then you can use all sour cream and vice versa. The flavor will be subtly different. But still delicious.
- Freshly grated cheese will melt down better than bagged cheese. You can substitute the pepper jack cheese for another favorite such as cheddar and Monterey Jack cheese
Step by Step Instructions
Step 1: In a small bowl, add the mayonnaise, Greek yogurt, chipotle sauce, garlic salt, and lime juice in a small bowl. Whisk until smooth and combined well.
Step 2: Spread a few spoonfuls of chipotle sauce on a tortilla and top with chicken and cheese. Top with another tortilla.

Notes
- For some extra zest, squeeze some extra lime juice over your chicken before adding the top tortilla.
