mayo

plain Greek yogurt

pepper jack cheese

Instructions
Combine the mayonnaise, Greek yogurt, chipotle sauce, garlic salt, and lime juice in a small bowl. Whisk until smooth and homogenous.
Spread a few spoonfuls of chipotle sauce on a tortilla and top with chicken and cheese. Top with another tortilla.
Transfer your quesadilla to a large skillet or pan and cook over medium heat for 2-3 minutes per side, or until golden brown.
Serve and enjoy!
Notes
For some extra zest, squeeze some extra lime juice over your chicken before adding the top tortilla.
We like to serve our quesadillas alongside guacamole, salsa, extra chipotle sauce, queso sauce etc.
If you don’t have Greek yogurt then you can use all sour cream and vice versa. The flavor will be subtly different. But still delicious.
Freshly grated cheese will melt down better than bagged cheese.
