Ingredients you’ll need

To get started making this recipe, you’ll first want to gather all your ingredients. Be sure to check out the recipe card below for complete instructions and measurements.

Here is what you’ll need:

  • Mayonaise
  • Greek yogurt 
  • Chipotle sauce – canned (can be found in the Mexican cuisine aisle of the local grocery store)
  • 1 lime, freshly squeezed
  • Garlic salt
  • Pepper jack cheese – freshly shredded for best results.
  • Shredded chicken – perfect for using up leftovers or use rotisserie chicken if desired
  • 4 large flour tortillas 

You’ll also want some fresh cilantro & lime on the side to garnish your quesadillas.

Substitutions

  • This recipe makes 2 large quesadillas, but you can use smaller tortillas for more servings.
  • If you don’t have Greek yogurt then you can use all sour cream and vice versa. The flavor will be subtly different. But still delicious. 
  • Freshly grated cheese will melt down better than bagged cheese. You can substitute the pepper jack cheese for another favorite such as cheddar and Monterey Jack cheese

Step by Step Instructions

Step 1: In a small bowl, add the mayonnaise, Greek yogurt, chipotle sauce, garlic salt, and lime juice in a small bowl. Whisk until smooth and combined well.

Step 2: Spread a few spoonfuls of chipotle sauce on a tortilla and top with chicken and cheese. Top with another tortilla.

Step 3: Transfer your quesadilla to a large skillet or pan and cook quesadillas over medium-high heat for 3-5 minutes per side, or until golden brown and the cheese is melted to perfection.

Step 4: Cut into wedges and serve with sides like guacamole, sour cream, and salsa for a quick, satisfying meal that’s bursting with bold, savory flavors.

Note: We like to serve our quesadillas alongside homemade guacamole, salsa, extra chipotle sauce, spicy queso, etc.

Have leftovers? If you have any remaining leftovers then they can be stored in the fridge for up to 4 days in an airtight storage container. You can reheat your leftovers in the microwave for about 45 seconds or in a pan over medium heat until warm and crispy.

Instructions

  • Combine the mayonnaise, Greek yogurt, chipotle sauce, garlic salt, and lime juice in a small bowl. Whisk until smooth and homogenous.
  • Spread a few spoonfuls of chipotle sauce on a tortilla and top with chicken and cheese. Top with another tortilla. 
  • Transfer your quesadilla to a large skillet or pan and cook over medium heat for 2-3 minutes per side, or until golden brown.
  • Serve and enjoy!

Notes

  • For some extra zest, squeeze some extra lime juice over your chicken before adding the top tortilla. 
  • We like to serve our quesadillas alongside guacamole, salsa, extra chipotle sauce, queso sauce etc. 
  • If you don’t have Greek yogurt then you can use all sour cream and vice versa. The flavor will be subtly different. But still delicious. 
  • Freshly grated cheese will melt down better than bagged cheese.
