This morning while working on chores, it was cold and windy. The Fall temps have been coming and going for a little while, but I think that they are here to stay. Although, we live in Nebraska, so who knows. It could snow soon or we can have summer like weather and even thunderstorms.
One of my favorite things about fall are all of the soups, stews, foods associated with cooler weather. I think they call them comfort foods. Wink. So today for lunch I made one of my favorite lentil soup recipes.
Its quick, its easy, its healthy and its hearty. Oh, and its delicious too!
Healthy & Hearty Lentil Soup
- 1 cup of green or brown lentils (washed and picked clean)
- 4 cups of filtered water
- 1 medium onion, sliced thinly
- 3-6 cloves of garlic (I go heavy here because I LOVE garlic) peeled, sliced
- 3 tablespoons tomato paste
- 1/2 cup of olive oil
- 2 small/medium bay leaves
- 1 teaspoon oregano
- Salt & pepper to taste
Add all ingredients to large pan, stir, cover and simmer on medium/low for about 40 minutes until soft, but not disintegrated.
That’s all there is to it. It’s so simple and delicious.
Add salt & pepper to taste. Serve & enjoy!
