Pistachios and blackberries are both delicious and healthy. Pair them with a creamy butter and they are truly scrumptious.

If you’ve never heard of butter boards, you’re probably wondering what in the world is a butter board anyway?

Butter boards are the trendy new appetizer that gives the classic charcuterie board a run for it’s money! These delicious butter boards are definitely right up my alley.

In a nutshell, they are wooden boards (or platters) smeared with softened butter and topped with delicious (savory or sweet) garnishes.

Ingredients

This simple blackberry butter board does not require anything complicated.

Here’s what you’ll need:

  • salted butter — European butter is recommended in this recipe. European butter is typically cultured and is just so scrumptious.
  • flaky sea salt
  • blackberry preserves
  • fresh blackberries – If your blackberries are very large, I would recommend cutting them in half lengthways to make them more manageable. 
  • pistachios
  • zest of 1 lemon
  • fresh thyme

Equipment needed:

  • wooden board or platter – pro tips: make sure it is a clean wooden board used for serving and free of cracks to prevent bacteria growth. Otherwise, you could line the board with parchment paper or use another platter, such as ceramic. And I also recommend using a wooden board that has been treated with butcher block oil. If your board has not been treated with oil and has a rough finish I recommend placing a sheet of parchment paper under the butter. 
  • spatula

The butter board is best served immediately. If making in advance, leave the pistachios off and refrigerate wrapped tightly in plastic wrap. 

Allow the butter board to sit out at room temperature for 30 minutes before serving. Don’t forget to add the pistachios! 

Store leftovers in an airtight container in the refrigerator for up to three days. 

Instructions

Add the room temperature butter to a small bowl and mix with a rubber spatula until soft and easily spreadable. Use the spatula to press the butter against the side of the bowl while mixing to help get it smooth. 

I would recommend not to microwave the butter to soften it. Doing so may cause the fat and milk solids in the butter to separate creating a greasy mess. 

Next, spread the softened butter over the surface of a wooden board or platter. Use a butter knife to add some swirls to the surface of the butter to create visual interest and pockets for the toppings to sit in.

Sprinkle the flaky sea salt over the top of the butter.

Add spoonfuls of the blackberry preserves to dollop over top of the butter, about 1 teaspoon each.

Then, sprinkle the fresh blackberries and pistachios over the top.

Use a zester and zest the lemon over top of the board. Then garnish with small pieces of thyme. 

Serve with crusty bread and enjoy!
