We love this recipe for a cozy family Sunday dinner. The kids especially love it over mashed potatoes and it tastes super yummy over Boursin Mashed Potatoes.
Substitutions
- If sirloin isn’t available, you can use chuck roast or beef stew meat. Just note that these cuts may require a slightly longer cooking time to become tender.
- White mushrooms work great, but you can also use cremini or baby bella mushrooms for a deeper, earthier flavor.
- Serve over egg noodles, rice, mashed potatoes, couscous, barley, einkorn, or other grain.
Instructions
In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes, season with salt, pepper and thyme, then sear on all sides until browned.
Add the butter, sliced mushrooms and diced onion, and cook until they begin to soften, about 5-7 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Pour in the beef broth and Worcestershire sauce, stirring to combine. Bring the mixture to a simmer.
Reduce the heat to low, cover the skillet, and let the beef simmer for 1 ½ to 2 hours, or until the beef is tender.
Once the beef is tender, mix the cornstarch with 3 tablespoons of cold water to form a slurry. Slowly stir the slurry into the skillet, stirring constantly until the gravy thickens, about 2-3 minutes.
