Air Fryer Potato Wedges with Aioli Sauce
These air fryer potato wedges are healthier than frying and taste amazing with savory garlic and herb flavors! This simple recipe is great for family dinners and busy weeknights.
And it is paired with a scrumptious malt vinegar aioli sauce.

Here’s what you need to make these delicious potato wedges at home:
Potato Wedges
- medium russet potatoes
- garlic salt
- rosemary
- oregano
- dried parsley
- olive oil
- coarse sea salt for garnishing
Malt Vinegar Aioli
- mayo
- malt vinegar
- garlic powder
- lemon juice
Instructions
Cut the potatoes into wedges and soak the potato wedges in cold water for 15 minutes. Soaking potatoes in water helps to remove excess starch.
How do you cut potatoes in wedges?
Slice the potato in half lengthwise with a sharp knife over a cutting board. Place the cut side of the potato on the cutting board and cut it in half again to create quarters. Repeat with the other half.
While the potatoes are soaking, make the malt vinegar aioli by whisking together the mayo, malt vinegar, garlic powder, and lemon juice. Place in the fridge until ready to serve.
For a more intense flavor, be sure to let the malt vinegar aioli chill in the fridge for at least 20 minutes prior to serving.
Pat the potato wedges dry with a clean kitchen towel or paper towels and move them to a large bowl.
Add the olive oil, garlic salt, rosemary, oregano, and dried parsley to the potato wedges. Toss well to coat.
Transfer the seasoned wedges to the air fryer basket. Depending on the size of your air fryer you may need to work in batches. This usually isn’t necessary for most air fryers.
Air fry at 390°F for 20 minutes, being sure to stir the wedges every 5 minutes.
Allow the finished potato wedges to cool slightly before serving them alongside the malt vinegar aioli. Garnish with coarse sea salt and enjoy!
TIPS
These potato wedges are a bit on the softer side. If you like yours to be crispy potato wedges, air fry them for 30 minutes instead of 20.

How to store leftovers
These potato wedges are best served fresh. However, if you make extras and want to save for later, store in an airtight container in the refrigerator for about 3 days. To reheat: Spread your potato wedges on a baking sheet lined with parchment paper in a single layer. Heat until warmed through… for about 10 minutes or so in a preheated 350 F degree oven.
