Heat up the cast iron or other large non-stick skillet over medium-low heat. Add a little coconut oil to the pan to coat the bottom.
In a large mixing bowl, stir together all ingredients until well combined.
Measure out ¼ cup of the fritter batter and add to the pre-heated skillet. Heat until the edges become golden brown and then flip and repeat on the other side.
Remove from the pan when both sides are golden and the center is cooked through. Allow to cool slightly and then dust with powdered sugar if desired.
