Cut up 12 slices of brioche bread into cubes and arrange evenly in a lightly greased 9x13 glass casserole dish. Should be about 12 cups.
n a medium bowl, whisk eggs, milk, maple syrup, ground cinnamon and pure vanilla and pour all over bread. Cover tightly with tinfoil and allow it to soak for at least 3 hours, but preferably overnight for 8-10 hours.
When ready to bake, preheat the oven to 425F, then bake covered for 30 minutes. Remove the foil and continue to bake until the top starts to get golden brown (about 5-10 minutes).
Serve warm with powdered sugar, more maple syrup or fresh fruit.
