Prepare your pasta according to package instructions. Don't forget to salt the pasta water! While the pasta is cooking, shred the cheeses and mince the garlic.
When the pasta is on the last minute of cooking time, heat up the olive oil in a large skillet.
Add in the garlic and saute just until flavor begins to come out. About 30 seconds or less. Be careful not to burn the garlic - it will become bitter. Remove from heat.
Drain the pasta.
Stir in the butter and toss in the pasta directly to the garlic oil. Lightly toss in the cheeses. I like to incorporate the cheese lightly so that there are big chunks of it scattered throughout. It makes for big bold flavorful bites.
